I tend to be pretty picky about cover songs. I prefer artist to put their own spin on the song rather than just rehashing the same song. Anyone can play a song, but very few people can take something another person has created and make it their own. A perfect example of this is Streetlight Manifesto's cover of Such Great Heights by The Postal Service. I particularly like the way they adapted the synthesizer intro to horns.
